Maple Cream Puffs with Maple Glaze

Chocolate-Maple-Vegan-Ice-Cream

Chocolate Peanut Butter Maple Ice Cream

Ingredients (Makes approximately 4 cups of delicious ice cream.)

  • 2 cans of cold full fat coconut milk
  • 1/2 cup peanut butter
  • 1/3 cup raw cocoa powder
  • 1/3 cup maple syrup
  • 2 tsp vanilla

Instructions:

  1. Add all of the ingredients to your blender or food processor and mix until well blended.
  2. You could chill this mixture if time permits (I didn’t have time but my coconut milk and maple syrup were in the fridge beforehand).
  3. Pour into your ice cream maker and follow your ice cream maker’s instructions.

Maple Syrup Cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter, room temperature
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoon maple extract
  • 4 tablespoon butter, room temperature
  • 1 cup confectioners sugar
  • 2 tablespoon maple syrup

Dark Chocolate Cashew Pecan Truffles

Ingredients

  • 1 cup cashews + 4-5 tbsp chopped
  • 1 cup pecans
  • 2 tbsp cacao nibs (can omit if you don’t have them on hand)
  • 1/4 cup oats
  • 1 tbsp agave nectar*
  • 1 tbsp maple syrup*
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 tsp pumpkin pie spice
  • 3/4 tsp ground cinnamon
  • 1 bar of your favorite dark chocolate

*If you don’t have agave nectar, you could omit this, and double the maple syrup (more maple syrup is always a good thing)
